Recipe: English Muffin Pizzas

This was a really quick tea for us tonight so I thought I’d share it with you! Can’t remember where the idea originally came from, but I’ve been making it for years!

It’s so easy to make and all you really need is English muffins, tomato puree and cheese, the rest is up to you! It’s a good way to use up leftover odds and ends and would be great to make with kids.

You’ll need:
Any amount of English muffins
Tomato puree
A sprinkling of any kind of cheese (grated)
Any type of topping you fancy!

The recipe:

Slice the muffins in half through the middle and stick them in the toaster until they start to get crispy but are still white.

Spread the tomato puree onto the white side.

Top with whatever you have available, I used mushroom, onion and sweetcorn for ours.

Top with cheese and stick under a medium grill until the cheese has melted and started to brown.

Easy eh?! Obviously if you are using meat or fish I’d recommend that it is cooked first as the muffins only spend 5-10 mins in the grill.

  1. Omg this is amazing, muffins and pizza are both in my top 5 favourite foods anyway. I am trying so hard to diet and I just can't after reading blogs this evening haha I will have to try and make this xx
