One thing you may know about me is that I’m a big fan of baking (and eating baking!). Probably too much of a fan, especially of the eating part. But being a busy mum makes it hard to set time aside to make something fancy, and that’s when I look for a quick fix to my cravings. I’m amazed at how well you can bake some things in the microwave and here are a few tasty treats for when time is short (or not!).
Recently I’ve been salivating over the delicious recipes at Jane’s Patisserie and a recipe caught my eye, just as I happened to have all the ingredients in the cupboard!
The recipe was for microwave cookies for two. It is so easy and quick and we all loved it! I do wish we had some ice cream for the top, but putting it in ramekins was a great idea for individual desserts. The girls had the ramekins, Allan and I shared a big bowl instead of splitting it and it came out perfectly.
Citrus & Honey Microwave Sponge
I remember our first microwave and the whole book of recipes that it came with, but never really thought of it as a proper way to cook until I moved into my last flat. I was in the middle of renovating the kitchen and I had invited Allan over for tea, forgetting that I had no cooker! I made Insalata Caprese for starters, and managed to cook the main course of vegetarian spaghetti bolognaise and this dessert in the microwave. Thankfully he was impressed!
This is my go-to recipe when there’s a lack of snacks in the house, mainly because I usually have the ingredients in the cupboard, and also because you can add anything to it. In the past we have added raisins, marshmallows and chocolate, but you can also swap out the vanilla for orange, caramel, lemon, whatever you like.
